Brent and Brianna Haith are a husband and wife duo whose goal was to bring top quality food, service, and catering to Nebraska. In 2022, the dream became a reality with the purchase of their food truck. They began popping up in local towns, sharing their delicious smoked meats and sides with the masses.

The dream started many years ago, when Brent and Brianna first met. The dream began as a massive restaurant, event space, and bar; merging both of their past lives together into one business. For many years, Brent owned and/or managed local bars. Brianna grew up with her parents owning a small meat processing business, and attended the University of Nebraska - Lincoln and received a Degree in Hospitality, Restaurant, and Tourism Management with a minor in Food Science and Technology. While in school, she spent nearly 5 years working for the local Raising Cane's franchisee in everything from Marketing to Quality Assurance.

While the dream was put on hold, it slowly morphed over the years. New jobs brought new opportunities for both Brent and Brianna, and new additions to their family made the dream seem like that is all it ever would be. That is, until opportunity presented itself for Brent and Brianna to take a leap of faith and purchase the food truck. 

While Brianna currently runs the day to day and is the full-time operator of the business, Brent helps on days when he's not scheduled at his other job at OPPD. The business and the kids keep them both busy, with new opportunities to improve the business constantly presenting themselves.

In early 2023, they upgraded equipment and purchased a larger smoker to be able to handle large events and catering, and have been off to the races ever since. During peak season, the food trailer serves hundreds of people a week; with our weekends booking out months in advance.

In late 2023, they took another chance on leasing a building in Auburn. The need for more space for prep and storage was necessary, so they decided to turn the old Auburn Design Shop into a catering facility, with the hopes to turn the front into a retail store to sell their delicious meat and other cooking related items.

The Spotted Cow Catering Co. offers delicious, authentic, home-style cooked meals at a reasonable price and can cater to your event needs. We offer quality smoked meat products along with delicious sides to fit the need for events both big and small. With the mobility of a food trailer, we are able to bring food to the masses, and meet them where they are.
